Ingredients

  • 500 g Potatoes (waxy variety, such as Yukon Gold or new potatoes)
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice (freshly squeezed)
  • 2 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 2 cloves Garlic (minced)
  • 2 tbsp Fresh parsley (chopped)
  • 1 tbsp Fresh mint (chopped)
  • 2 Green onions (thinly sliced)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Wash and scrub the potatoes, leaving the skin on. Cut them into bite-sized cubes (roughly 2 cm pieces).

Step 2

In a medium-sized pot, add the diced potatoes and enough salted water to cover them. Bring to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 12-15 minutes, or until they are fork-tender but not falling apart.

Step 3

Drain the potatoes and let them cool for 5 minutes. Transfer them to a large mixing bowl.

Step 4

In a small bowl, whisk together olive oil, lemon juice, ground cumin, smoked paprika, minced garlic, salt, and black pepper to create the dressing.

Step 5

Pour the dressing over the warm potatoes and gently toss to coat evenly. Allow the potatoes to absorb the flavors for 5-10 minutes.

Step 6

Add the chopped parsley, mint, and green onions to the potato mixture. Gently fold the herbs into the salad.

Step 7

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 8

Serve the salad warm or at room temperature, garnished with additional parsley or mint if desired.
