Ingredients

  • 2 cans (5 oz each) canned tuna
  • 1 cup breadcrumbs
  • 2 eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 2 tablespoons, chopped fresh parsley
  • 2 tablespoons, chopped green onions
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup (for frying) vegetable oil

Directions

Step 1

Drain the canned tuna well and transfer it to a medium-sized mixing bowl.

Step 2

Add breadcrumbs, eggs, mayonnaise, dijon mustard, parsley, green onions, garlic powder, onion powder, salt, and black pepper to the bowl.

Step 3

Use a fork or clean hands to mix all the ingredients together until well combined.

Step 4

Shape the mixture into small patties, about 2 inches in diameter and 1/2 inch thick. Place the patties on a plate and refrigerate for 10 minutes to help them firm up.

Step 5

Heat the vegetable oil in a large skillet over medium heat. The oil should be hot but not smoking.

Step 6

Carefully place the patties in the hot oil, making sure not to overcrowd the skillet. Cook in batches if necessary.

Step 7

Fry the croquettes for 3-4 minutes on each side, or until golden brown and crispy.

Step 8

Transfer the cooked croquettes to a paper towel-lined plate to drain any excess oil.

Step 9

Serve warm with your favorite dipping sauce, such as tartar sauce or aioli.
