Ingredients

  • 500 grams Cauliflower
  • 1 large Egg
  • 100 grams Shredded mozzarella cheese
  • 30 grams Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 120 ml Marinara sauce (low sugar)
  • 50 grams Shredded part-skim mozzarella cheese (for topping)
  • 100 grams Cherry tomatoes, sliced
  • 10 grams Fresh basil leaves
  • 0.5 teaspoon Red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.

Step 2

Chop the cauliflower into small florets and pulse in a food processor until it reaches a rice-like consistency.

Step 3

Place the cauliflower rice in a microwave-safe bowl and microwave on high for 5 minutes. Allow it to cool slightly, then transfer to a clean dish towel and squeeze out as much moisture as possible.

Step 4

In a large mixing bowl, combine the cauliflower rice, egg, shredded mozzarella cheese, Parmesan cheese, garlic powder, oregano, and salt. Mix until a dough forms.

Step 5

Transfer the cauliflower dough onto the prepared baking sheet and press it into a 10-inch (25 cm) circle, about 1/4 inch (0.6 cm) thick.

Step 6

Bake the crust in the preheated oven for 15-20 minutes, or until it is golden brown and firm to the touch.

Step 7

Remove the crust from the oven and spread the marinara sauce evenly over the top, leaving a 1/2-inch (1.3 cm) border around the edges.

Step 8

Sprinkle the shredded mozzarella cheese over the sauce, then arrange the cherry tomato slices evenly across the pizza.

Step 9

Return the pizza to the oven and bake for an additional 7-10 minutes, or until the cheese has melted and is bubbling.

Step 10

Remove from the oven and garnish with fresh basil leaves and a sprinkle of red pepper flakes, if using.

Step 11

Slice and serve immediately. Enjoy your guilt-free, delicious low-calorie pizza!
