  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped
  • 4 pieces lemon wedges

Directions

Step 1

Pat the trout fillets dry with a paper towel and set them aside.

Step 2

In a shallow dish, combine the all-purpose flour, salt, and ground black pepper.

Step 3

Dredge each trout fillet lightly in the flour mixture, shaking off excess.

Heat 2 tablespoons of the butter and the olive oil in a large skillet over medium heat.

Cook the trout fillets, skin-side down first, for 3-4 minutes per side, or until golden brown and fully cooked. Transfer the fillets to a plate and keep warm.

Step 6

In the same skillet, reduce the heat to low and add the remaining 2 tablespoons of butter.

Step 7

Once the butter melts, stir in the lemon juice and capers. Let the sauce simmer for 1-2 minutes.

Spoon the lemon caper butter sauce over the trout fillets.

Step 9

Garnish with freshly chopped parsley and serve with lemon wedges on the side.
