Ingredients

  • 4 pieces Tilapia fillets
  • 1 cup Pineapple chunks (fresh or canned, drained)
  • 1 cup Mango (diced)
  • 1 medium Red bell pepper (diced)
  • 0.5 medium Red onion (finely chopped)
  • 0.25 cup Cilantro (fresh, chopped)
  • 1 medium Lime (juiced)
  • 2 tablespoons Olive oil
  • 2 cloves Garlic (minced)
  • 1 teaspoon Cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a small bowl, mix together the olive oil, minced garlic, cumin, chili powder, salt, and black pepper to create a seasoning mixture.

Step 3

Place the tilapia fillets on the prepared baking sheet. Brush both sides of each fillet evenly with the seasoning mixture.

Step 4

Bake the tilapia in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

Step 5

While the fish is baking, prepare the tropical salsa. In a medium bowl, combine the pineapple chunks, diced mango, red bell pepper, red onion, and chopped cilantro.

Step 6

Squeeze the juice of one lime over the salsa mixture and toss gently to combine all the ingredients. Set aside.

Step 7

Once the tilapia is fully cooked, remove it from the oven. Plate each fillet and top generously with the tropical salsa.

Step 8

Serve immediately with your choice of rice, quinoa, or a fresh green salad on the side for a complete tropical-inspired meal.
