Ingredients

  • 2 cups Pineapple juice
  • 1 cup Mango juice
  • 4 tablespoons Gelatin powder
  • 1 cup Water
  • 1 cup Coconut milk
  • 1 tablespoon Sugar
  • 1 cup Fresh pineapple chunks
  • 1 cup Diced mango
  • 1 cup Sliced kiwifruit
  • 2 tablespoons Passion fruit pulp

Directions

Step 1

In a small bowl, dissolve 2 tablespoons of gelatin powder in 1 cup of warm water. Let it bloom for 5 minutes.

Step 2

In a saucepan, heat 2 cups of pineapple juice over medium heat, but do not bring it to a boil. Stir in the bloomed gelatin and mix until completely dissolved.

Step 3

Pour the pineapple gelatin mixture into a clear serving dish or individual cups to create the first layer. Add a few pineapple chunks, diced mango, and sliced kiwi to this layer. Place in the refrigerator to set for about 1-2 hours.

Step 4

While the first layer sets, repeat the blooming process with the remaining 2 tablespoons of gelatin powder in a small bowl, using 1/4 cup of warm water.

Step 5

In a clean saucepan, combine 1 cup of mango juice, 1 cup of coconut milk, and 1 tablespoon of sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and stir in the bloomed gelatin until fully dissolved.

Allow the coconut-mango mixture to cool to room temperature (this prevents it from melting the first layer). Once cooled, gently pour this mixture over the pineapple layer, creating a second layer. Add additional passion fruit pulp for a tropical burst, if desired.

Refrigerate the jello for an additional 4-5 hours or until fully set.
