Ingredients

  • 2 medium-sized Mango
  • 1 small Pineapple
  • 400 ml Coconut cream
  • 200 ml Sweetened condensed milk
  • 2 teaspoons Gelatin powder
  • 50 ml Water
  • 2 tablespoons Lime juice
  • 50 grams Shredded coconut
  • 6 leaves Mint leaves

Directions

Step 1

Peel and dice the mangoes into small cubes and set aside.

Step 2

Peel and core the pineapple, then cut it into small cubes as well. Pat it dry with a paper towel to remove excess moisture.

Step 3

In a small bowl, combine the gelatin powder and water. Let it bloom for about 5 minutes, then microwave for 10 seconds or until fully dissolved. Set aside to cool slightly.

Step 4

In a blender, combine the coconut cream, sweetened condensed milk, and lime juice. Blend until smooth and well combined.

Step 5

Add the dissolved gelatin to the blended coconut mixture and mix thoroughly to ensure even distribution.

Take six serving glasses or dessert bowls and layer the bottom with a mix of mango and pineapple cubes.
