Ingredients

  • 400 ml Coconut milk
  • 250 ml Heavy cream
  • 200 g Pineapple chunks (fresh or canned, drained)
  • 150 g Mango (ripe, diced)
  • 50 g Granulated sugar
  • 10 g Gelatin powder
  • 50 ml Cold water
  • 1 tsp Vanilla extract
  • 20 g Shredded coconut (optional, for garnish)
  • 5 leaves Mint leaves (optional, for garnish)

Directions

Step 1

In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 5 minutes.

In a medium saucepan, combine the coconut milk and granulated sugar. Heat over medium heat, stirring constantly, until the sugar dissolves. Do not let it boil.

Remove the saucepan from the heat and stir in the bloomed gelatin until it is completely dissolved.
