Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Granulated sugar
  • 1 cup Shredded unsweetened coconut
  • 1 cup Canned coconut milk, full-fat
  • 0.25 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Crushed pineapple (drained)
  • 0.5 cup Chopped macadamia nuts (optional)
  • 2 tablespoons Powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar, shredded coconut, coconut milk, vegetable oil, eggs, and vanilla extract. Mix until smooth and well combined.

Step 4

Fold the crushed pineapple into the wet ingredients, followed by the dry ingredients. Stir just until combined, being careful not to overmix. If using macadamia nuts, gently fold them in as well.

Step 5

Pour the batter into the prepared loaf pan, spreading it evenly.

Step 6

Bake in the preheated oven for 50–55 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 7

Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 8

If desired, dust the top with powdered sugar before serving for a decorative touch.

Step 9

Slice and enjoy this tropical treat on its own or with a dab of butter or cream.
