Ingredients

  • 500 grams boneless, skinless chicken breast
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 2 green onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 2 tablespoons cooking oil (vegetable or coconut)
  • 1 teaspoon cornstarch
  • 3 tablespoons water
  • 4 cups cooked white rice (for serving)

Directions

Step 1

Slice the chicken breast into thin strips and set aside.

Step 2

In a small bowl, mix the soy sauce, honey, lime juice, and cornstarch. Add 3 tablespoons of water to thin it out and stir well. This will be the stir fry sauce.

Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of cooking oil.

Once the oil is hot, add the chicken strips and cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked and lightly browned. Remove the chicken from the pan and set aside.
