Ingredients

  • 15 oz (canned, drained and rinsed) black beans
  • 1 (ripe, diced) mango
  • 1 cup (diced fresh or canned, drained) pineapple
  • 1 (small, diced) red bell pepper
  • 0.5 (small, finely diced) red onion
  • 0.25 cup (chopped fresh) cilantro
  • 1 (small, seeded and finely diced) jalapeño
  • 3 tbsp (freshly squeezed) lime juice
  • 2 tbsp olive oil
  • 1 tsp honey
  • 0.5 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper

Directions

Step 1

Drain and rinse the canned black beans thoroughly, then transfer them to a large mixing bowl.

Step 2

Dice the mango and pineapple into small bite-sized pieces and add them to the bowl with the black beans.

Step 3

Chop the red bell pepper and dice the red onion, then add them to the bowl as well.

Step 4

Finely chop the fresh cilantro and minced jalapeño (if you prefer less heat, remove the seeds). Add these to the salad mixture.

Step 5

In a small bowl, whisk together the lime juice, olive oil, honey, ground cumin, salt, and black pepper to make the dressing.

Step 6

Pour the dressing over the salad ingredients and gently toss until everything is well coated.

Step 7

Allow the salad to sit for about 10 minutes to let the flavors meld together.

Step 8

Serve the Tropical Black Bean Salad chilled or at room temperature. Enjoy it as a side dish, a dip with tortilla chips, or a light meal!
