Ingredients

  • 1 lb ground beef (80% lean)
  • 1 lb ground pork
  • 1 lb chorizo sausage, casings removed
  • 1 large yellow onion, finely diced
  • 1 medium bell pepper, diced (any color)
  • 4 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes with green chilies
  • 2 tbsp tomato paste
  • 15 oz kidney beans, drained and rinsed
  • 15 oz black beans, drained and rinsed
  • 15 oz pinto beans, drained and rinsed
  • 2 cups beef broth
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1.5 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 0.25 tsp ground cinnamon
  • 2 bay leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 0 optional toppings: shredded cheese, sour cream, chopped cilantro, diced green onions

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a wooden spoon. Remove the beef with a slotted spoon and set aside.

Step 3

In the same pot, add the ground pork and cook in the same manner until browned. Remove with a slotted spoon and set aside with the beef.

Step 4

Add the remaining 1 tablespoon of olive oil to the pot and cook the chorizo sausage, breaking it apart until fully cooked, about 5 minutes. Remove with a slotted spoon and set aside with the other meats.

Step 5

Reduce the heat to medium and add the diced onion and bell pepper. Sauté for 4-5 minutes until softened.

Add the minced garlic and sauté for another 1 minute until fragrant.

Step 7

Stir in the chili powder, ground cumin, smoked paprika, cayenne pepper, cinnamon, salt, and black pepper, allowing the spices to coat the vegetables and bloom for about 1 minute.

Add the tomato paste and stir to combine, cooking for an additional 2 minutes.

Return the cooked meats to the pot and pour in the crushed tomatoes, diced tomatoes with green chilies, and beef broth. Stir well to combine.

Add the kidney beans, black beans, pinto beans, and bay leaves. Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for 60-75 minutes, stirring occasionally.

Taste and adjust seasonings as needed, adding more salt or spices to your preference.
