  • 480 ml heavy whipping cream (cold)
  • 30 grams powdered sugar
  • 6 grams gelatin powder
  • 45 ml water (for blooming gelatin)

Directions

Step 1

In three separate bowls, chop and prepare the dark chocolate, milk chocolate, and white chocolate. Keep them ready for melting.

Bloom the gelatin powder by sprinkling it over 45 ml of water in a small bowl. Let it sit for 5 minutes until it blooms and becomes spongy.

In a small saucepan over low heat, melt the bloomed gelatin gently until it turns into a smooth liquid. Do not let it boil. Set aside to cool slightly.
