Ingredients

  • 2 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.33 cup dried cranberries
  • 0.33 cup golden raisins
  • 1 tablespoon orange zest
  • 0.5 cup heavy cream, plus extra for brushing
  • 1 unit large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar for topping (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Stir in the dried cranberries, golden raisins, and orange zest, ensuring they are evenly distributed.

Step 5

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 6

Pour the wet ingredients into the dry ingredients. Gently mix until the dough just comes together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface. Gently press it into a 1-inch-thick disk.

Step 8

Use a sharp knife or bench scraper to cut the disk into 8 wedges. Transfer the wedges to the prepared baking sheet, leaving space between them.

Step 9

Brush the tops of the scones with a bit of heavy cream and sprinkle with coarse sugar if desired.

Step 10

Bake for 18-20 minutes, or until the scones are golden brown and cooked through.

Step 11

Remove from the oven and allow the scones to cool on a wire rack for a few minutes before serving. Enjoy warm or at room temperature!
