Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 cup buttermilk
  • 0.5 cups unsalted butter, melted and cooled
  • 2 units large eggs
  • 1 teaspoons vanilla extract
  • 0.75 cups fresh blueberries
  • 0.75 cups fresh raspberries
  • 0.75 cups fresh strawberries, diced

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or coat with non-stick cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

Step 3

In a separate bowl, whisk together the buttermilk, melted and cooled butter, eggs, and vanilla extract until smooth.

Step 4

Create a well in the center of the dry ingredients and gradually pour in the wet ingredients, gently mixing until just combined. Avoid overmixing to ensure light and fluffy muffins.

Step 5

Carefully fold in the blueberries, raspberries, and diced strawberries with a rubber spatula, being mindful not to crush the berries.

Step 6

Using a spoon or an ice cream scoop, divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy your Triberry Muffins with a cup of coffee or tea!
