  • 1 cup Shredded mozzarella cheese
  • 1 cup Cooked spinach, drained and chopped
  • 0.5 cup Sun-dried tomatoes, chopped
  • 1 teaspoon Lemon zest
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, mix salt, black pepper, paprika, and garlic powder. Rub this spice mixture all over the chicken thighs, making sure to season under the skin as well.

In another bowl, combine the shredded mozzarella cheese, cooked spinach, sun-dried tomatoes, chopped cilantro, and lemon zest to make the stuffing mixture.
