Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Granola (store-bought or homemade)
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 cup Brown sugar
  • 2 large Eggs
  • 0.75 cup Milk
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried cranberries
  • 0.5 cup Chopped nuts (e.g., almonds, walnuts, or cashews)
  • 0.25 cup Chocolate chips (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease it lightly with non-stick spray.

Step 2

In a large bowl, whisk together the all-purpose flour, granola, baking powder, baking soda, salt, cinnamon, and brown sugar.

Step 3

In a separate medium-sized bowl, beat the eggs and whisk in the milk, vegetable oil, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Gently fold in the dried cranberries, chopped nuts, and optional chocolate chips to evenly distribute them throughout the batter.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve the muffins warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days.
