Ingredients

  • 3 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1.5 cups Warm water (110°F-115°F)
  • 3 tablespoons Honey
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil (or vegetable oil)
  • 1 tablespoon Butter (melted, for brushing)

Directions

Step 1

In a large mixing bowl, combine the warm water and honey. Sprinkle the active dry yeast on top and let it sit for 5-10 minutes until it becomes frothy.

Step 2

Add the olive oil, salt, and 2 cups of whole wheat flour to the yeast mixture. Mix until a smooth batter forms.

Step 3

Gradually add the remaining whole wheat flour and the all-purpose flour, 1/2 cup at a time, mixing well after each addition until a soft dough forms.

Step 4

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. Add a small amount of flour as needed to prevent sticking, but avoid adding too much.

Step 5

Place the dough into a lightly oiled bowl, turning to coat the dough with oil. Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for 1-1.5 hours, or until it has doubled in size.

Step 6

Punch the dough down and transfer it back to the floured surface. Shape the dough into a loaf and place it into a greased 9x5-inch loaf pan.

Step 7

Cover the loaf pan with the kitchen towel and let the dough rise again for 30-40 minutes, or until it has risen just above the edge of the pan.

Step 8

Preheat your oven to 375°F (190°C). Bake the bread for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Step 9

Remove the bread from the oven and immediately brush the top with melted butter. Let it cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.

Step 10

Slice and serve as desired. Store any leftover bread in an airtight container at room temperature for up to 4 days, or freeze for longer storage.
