  • 250 grams All-purpose flour
  • 125 grams Unsalted butter
  • 125 grams Granulated sugar
  • 3 large Egg yolks
  • 250 milliliters Whole milk
  • 1 teaspoon Lemon zest
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Cinnamon powder

Directions

Step 1

Preheat the oven to 180°C (350°F) and grease a muffin tin with butter.

Step 2

In a mixing bowl, combine the all-purpose flour, unsalted butter, and a pinch of salt. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs.

Add one egg yolk to the flour mixture and 1 tablespoon of cold water. Mix until it forms a dough. Wrap in cling film and refrigerate for 30 minutes.

Meanwhile, in a saucepan, mix the granulated sugar, remaining egg yolks, whole milk, lemon zest, cornstarch, and vanilla extract. Whisk continuously over medium heat until the mixture thickens to a custard-like consistency.
