Ingredients

  • 300 grams peewee potatoes
  • 120 grams unsalted butter
  • 100 grams granulated sugar
  • 50 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large egg yolks
  • 120 milliliters heavy cream
  • 1 piece pre-made pie crust
  • 10 grams powdered sugar (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the peewee potatoes thoroughly and boil them in a pot of water until fork-tender, about 15 minutes. Drain and allow to cool slightly.

Step 3

Peel the potatoes (the skin should easily slip off) and mash them until smooth in a large bowl.

Step 4

In a separate small saucepan, melt the unsalted butter over low heat. Add the granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Mix until fully combined and remove the mixture from the heat.

Step 5

Add the butter-sugar mixture to the mashed potatoes and stir well. Blend in the vanilla extract and egg yolks, mixing thoroughly.

Step 6

Gradually pour in the heavy cream while stirring the mixture until smooth and creamy.

Step 7

Roll out the pre-made pie crust and press it into a 9-inch pie dish. Trim any excess dough from the edges and crimp the rim for decoration.

Step 8

Pour the potato mixture into the pie crust, spreading it evenly. Smooth the surface with a spatula.

Step 9

Bake the pie in the preheated oven for 45-50 minutes, or until the filling is golden brown and set. A knife inserted in the center should come out clean.

Step 10

Remove the pie from the oven and let it cool to room temperature before serving. This allows the flavors to fully develop and the filling to firm up.

Step 11

Dust the top with powdered sugar for a decorative garnish if desired. Serve slices on their own or with a dollop of whipped cream.
