Ingredients

  • 300 grams couscous

  • 2 tablespoons tomato paste
  • 75 grams raisins
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon saffron threads
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges

Directions

Step 1

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Add the sliced carrots and zucchini, continuing to sauté for another 5 minutes until the vegetables start to become tender.
