Ingredients

  • 4 pieces stale corn tortillas
  • 3 tablespoons olive oil
  • 1 small, diced onion
  • 1 small, diced red bell pepper
  • 1 small, seeded and diced jalapeño pepper
  • 2 minced garlic cloves
  • 6 large eggs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup, shredded cheddar cheese
  • 0.25 cup, chopped fresh cilantro
  • 2 sliced green onions
  • 1 medium, diced tomato
  • 1 cut into wedges lime

Directions

Step 1

Cut the stale corn tortillas into 1-inch squares.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the tortilla pieces and cook, stirring frequently, until they are crispy and golden brown, about 5-7 minutes. Remove them with a slotted spoon and set them aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion, red bell pepper, and jalapeño pepper. Sauté until the vegetables are soft, about 4-5 minutes.

Add the minced garlic to the skillet and cook for another minute until fragrant.
