Ingredients

  • 2 cups whole wheat flour
  • 4 tablespoons ghee
  • 1 teaspoon salt
  • 0.75 cup water
  • 1 cup sattu (roasted gram flour)
  • 1 teaspoon nigella seeds
  • 0.5 teaspoon carom seeds
  • 0.5 teaspoon cumin seeds
  • 1 tablespoon pickle masala
  • 1 finely chopped green chili
  • 1 teaspoon, grated ginger
  • 2 tablespoons lemon juice
  • 2 tablespoons, chopped fresh coriander leaves

Directions

Step 1

Begin by preparing the dough: In a large bowl, combine whole wheat flour and 2 tablespoons of ghee. Add a pinch of salt and gradually add water to knead it into a firm yet pliable dough. Cover and let it rest for at least 20 minutes.

Step 2

While the dough is resting, prepare the filling: In another bowl, mix sattu (roasted gram flour) with nigella seeds, carom seeds, cumin seeds, and a pinch of salt. Add pickle masala, chopped green chili, grated ginger, lemon juice, and fresh coriander leaves. Mix well to form a crumbly mixture. If needed, add a few drops of water just enough so the mixture holds together.

Step 3

Preheat your oven to 180°C (356°F).

Step 4

Divide the dough into 8 equal round balls. Flatten each ball slightly and fill with about 1-2 tablespoons of the sattu filling.

Step 5

Carefully bring the edges together to encase the filling, sealing it well. Roll gently to make a smooth ball ensuring there are no cracks.

Step 6

Place the filled littis on a baking tray lined with parchment paper.

Step 7

Bake in the preheated oven for about 30-35 minutes, until they are golden brown and cooked through. Turn them occasionally to ensure even baking.

Step 8

Once baked, brush them lightly with the remaining ghee for added flavor and shine.

Step 9

Serve the littis hot alongside chokha, a mashed vegetable preparation for a traditional experience.
