Directions

Step 1

Prepare 240 ml of espresso coffee and let it cool to room temperature. Optionally, mix in 30 ml of coffee liqueur if using.

In a large mixing bowl, whisk together 4 egg yolks and 100 grams of granulated sugar until the mixture is pale and creamy (approximately 3-5 minutes).

Add 500 grams of mascarpone cheese to the egg mixture and gently fold until smooth and well combined.

In a separate bowl, whip 250 ml of heavy whipping cream to stiff peaks. Carefully fold the whipped cream into the mascarpone mixture, ensuring not to deflate the cream.
