Ingredients

  • 0.75 cup Granulated sugar
  • 2 cups Whole milk

Directions

Step 1

Separate the egg yolks and whites. In a medium-sized mixing bowl, whisk the egg yolks until they are light and creamy.

Step 2

Gradually add the granulated sugar to the egg yolks while whisking, until fully incorporated and smooth.

Step 3

In a medium saucepan, combine the whole milk, heavy cream, and cinnamon stick over medium heat. Warm the mixture until it just begins to steam, but do not let it boil.

Step 4

Gradually ladle a small amount of the warm milk mixture into the egg yolk mixture, whisking constantly, to temper the eggs. Repeat this process with another ladle or two to ensure the eggs do not curdle.

Step 5

Slowly pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Stir continuously over medium-low heat until the mixture thickens slightly and reaches a temperature of about 160°F (70°C). Do not let it boil.

Step 6

Remove the saucepan from heat and strain the mixture through a fine mesh sieve into a large mixing bowl to remove any solids.

Step 7

Stir in the vanilla extract, ground nutmeg, and dark rum or bourbon (if using). Allow the eggnog to cool to room temperature, then cover and refrigerate for at least 2-3 hours to chill completely.
