Ingredients

  • 75 grams hazelnuts
  • 75 grams almonds
  • 50 grams sesame seeds
  • 25 grams coriander seeds
  • 25 grams cumin seeds
  • 10 grams fennel seeds
  • 5 grams black peppercorns
  • 10 grams sea salt

Directions

Step 1

Preheat your oven to 180°C (350°F).

Spread the hazelnuts and almonds on a baking sheet. Bake in the preheated oven for 8-10 minutes, or until they are lightly toasted and aromatic. Stir halfway through to ensure even toasting.

Remove the nuts from the oven and allow them to cool slightly. Once cooled, rub the hazelnuts between your fingers or in a clean kitchen towel to remove most of the skins.

While the nuts are cooling, toast the sesame seeds, coriander seeds, cumin seeds, and fennel seeds separately in a dry skillet over medium heat. Stir frequently and toast each until fragrant and slightly golden; this should take about 3-4 minutes per batch. Please be careful not to burn them.
