Ingredients

  • 1 cup dried mixed beans
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 1 15-ounce can diced tomatoes (canned)
  • 6 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon ground paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the dried mixed beans under cold water, removing any debris. Place them in a large bowl, cover with water, and soak for at least 8 hours or overnight. Drain and rinse before using.

Step 2

In a large soup pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the soaked beans, diced tomatoes (with their juices), vegetable broth, bay leaves, thyme, paprika, salt, and pepper to the pot. Stir well to combine.

Step 5

Bring the soup to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if the soup becomes too thick.

Step 6

Once the beans are tender, remove the bay leaves and adjust seasonings if necessary. Stir in the fresh parsley and lemon juice for brightness.

Step 7

Serve hot with crusty bread or a side salad. Enjoy!
