Ingredients

  • 2 cups Raw Rice
  • 2 tablespoons Urad Dal (split black gram)
  • 0.5 teaspoons Fenugreek Seeds
  • 1 cup Grated Coconut
  • 2 tablespoons Cooked Rice
  • 1 teaspoon Salt
  • 1 tablespoon Sugar
  • 0 Water

Directions

Step 1

Rinse the raw rice thoroughly under running water. Soak the rice in water along with urad dal and fenugreek seeds for about 4 to 6 hours.

After the soaking time, drain the water. Transfer the soaked rice, urad dal, and fenugreek seeds into a blender. Add the grated coconut and cooked rice.

Gradually add water as needed and blend to a smooth and slightly thick batter.

Transfer the batter to a large bowl, add salt and sugar, and mix well. Cover the bowl with a lid and let it ferment overnight or for 8 to 12 hours in a warm place.

Once the fermentation is complete, the batter should be airy and doubled in volume. Mix the batter gently.

Heat an aappam pan or a non-stick skillet over medium heat. When hot, pour a ladleful of batter in the center of the pan. Swirl the pan slightly to spread the batter thin around the edges while keeping the center thick.

Cover the pan with a lid and cook the aappam on low heat for 3 to 4 minutes or until the edges start to lift and become golden brown and the center is cooked through.

Carefully remove the aappam from the pan using a spatula and serve hot.
