Ingredients

  • 2 pieces Green plantains
  • 2 cups Vegetable oil
  • 1 teaspoon Salt
  • 2 cups Water
  • 2 cloves Garlic

Directions

Step 1

Peel the green plantains by cutting off the ends and making a slit along the skin lengthwise. Use your fingers to remove the peel.

Step 2

Slice the plantains into 1-inch thick pieces.

Step 3

Heat the vegetable oil in a large frying pan over medium-high heat.

Step 4

Fry the plantain slices in the hot oil for about 3-4 minutes per side, or until they are lightly golden. Remove them and drain on paper towels.

Step 5

While the plantains are frying, prepare a garlic water mixture by crushing the garlic cloves and mixing them with 2 cups of water and 1 teaspoon of salt in a bowl.

Step 6

Once the plantain slices are cool enough to handle, use the bottom of a flat cup or a tostonera (a wooden plantain press) to flatten each slice to about 1/2 inch thickness.

Step 7

Dip each flattened plantain slice into the garlic water mixture for a few seconds, allowing them to soak up some flavor.

Step 8

Return the flattened plantains to the frying pan and fry again for another 3-4 minutes per side until they are crispy and golden brown.

Step 9

Remove the tostones from the oil, drain on paper towels, and sprinkle with additional salt to taste.

Step 10

Serve the tostones immediately, while hot and crispy, as a snack or a side dish.
