  • 3 Garlic cloves
  • 3 medium Russet potatoes
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 3 cups Kale
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Crushed red pepper flakes

Directions

Step 1

Remove the casing from the Italian sausage and break it into small pieces.

Step 2

In a large pot over medium heat, cook the sausage until browned, about 6-8 minutes.

Step 3

While the sausage cooks, dice the yellow onion and mince the garlic cloves.

Step 4

Remove the cooked sausage from the pot and set aside, leaving the drippings in the pot.

Step 5

Add the diced onion to the pot and sauté until translucent, about 5 minutes.

Step 6

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 7

Peel and thinly slice the russet potatoes. Add them to the pot along with the chicken broth.

Step 8

Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

Step 9

Once the potatoes are tender, add the cooked sausage back into the pot.

Step 10

Stir in the heavy cream and season the soup with salt, black pepper, and crushed red pepper flakes.

Step 11

Chop the kale, removing the tough stems, and add it to the soup.

Step 12

Simmer for another 5 minutes until the kale is wilted and the flavors are well blended.

Step 13

Taste and adjust seasoning if needed before serving hot.
