Ingredients

  • 300 grams Potatoes (waxy variety)
  • 3 large Eggs
  • 1 small Yellow onion
  • 100 milliliters Extra virgin olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (optional)

Directions

Step 1

Peel the potatoes and cut them into thin slices, about 3-4 mm thick. Ensure they are evenly sliced for consistent cooking.

Step 2

Peel and finely slice the onion into thin half-moons.

Step 3

Heat the olive oil in a medium-sized non-stick frying pan over medium heat. The oil should be hot but not smoking.

Step 4

Add the sliced potatoes and onions to the pan. Stir to coat them evenly with the olive oil, and lower the heat to medium-low. Cook gently for about 12-15 minutes, stirring occasionally, until the potatoes are tender but not browned.

Step 5

Using a slotted spoon, remove the potatoes and onions from the pan and transfer them to a large mixing bowl. Allow them to cool slightly.

Step 6

In a separate bowl, crack the eggs and beat them lightly with a fork. Add the salt and pepper (if using), and pour the beaten eggs over the cooled potatoes and onions. Mix gently to combine without breaking the potatoes too much.

Step 7

Heat the frying pan again with a tablespoon of the reserved olive oil over medium heat. Pour the potato, onion, and egg mixture into the pan, spreading it out evenly.

Step 8

Cook on medium-low heat for 5-6 minutes or until the bottom is set but the top is still slightly runny.

Step 9

Place a large plate over the pan and carefully flip the tortilla onto the plate. Slide the tortilla back into the pan to cook the other side for another 4-5 minutes until fully set and golden brown.

Step 10

Slide the tortilla onto a clean plate to cool slightly before serving. Slice into wedges and enjoy warm or at room temperature.
