Ingredients

  • 500 grams potatoes
  • 6 large eggs
  • 1 medium onion
  • 150 milliliters olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel the potatoes and rinse them under cold water. Cut them into thin slices, approximately 3mm thick.

Peel and finely slice the onion.

In a large, non-stick frying pan, heat the olive oil over medium heat. Once hot, add the potatoes and onion. Cook gently, stirring occasionally, until the potatoes are tender and the onions are translucent, about 20 minutes. Be careful not to brown them.

While the potatoes and onions are cooking, crack the eggs into a large bowl. Add salt and black pepper. Beat the eggs lightly with a fork until well mixed.
