Ingredients

  • 4 medium potatoes
  • 6 large eggs
  • 0.5 cup olive oil
  • 1 medium onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel the potatoes and slice them thinly, approximately 1/8 inch thick.

Step 2

Peel and finely slice the onion as well.

Step 3

In a large frying pan, heat the olive oil over medium heat.

Step 4

Add the sliced potatoes and onion to the pan, and sprinkle with salt. Stir to coat them evenly with oil.

Step 5

Cook, stirring occasionally, until the potatoes are tender but not brown, about 15-20 minutes.

Step 6

Meanwhile, crack the eggs into a large bowl and whisk them together with a pinch of salt and black pepper until well beaten.

Step 7

Once the potatoes and onions are cooked, remove them from the pan with a slotted spoon and add them to the beaten eggs. Stir gently to combine.

Step 8

Drain the frying pan of any excess oil, leaving just enough to coat the bottom.

Step 9

Reheat the pan over medium heat, then pour in the potato-egg mixture and quickly spread it out evenly.

Step 10

Cook the tortilla, shaking the pan occasionally to prevent sticking, until the bottom is set and golden brown, about 5 minutes.

Step 11

Place a large plate over the frying pan and carefully invert the tortilla onto the plate.

Step 12

Slide the tortilla back into the pan with the cooked side up, and cook the other side until it is set and golden, about another 5 minutes.

Step 13

Once cooked, transfer the tortilla to a serving plate and let it cool slightly before slicing into wedges.

Step 14

Serve warm or at room temperature as a tapas, main meal, or snack.
