Ingredients

  • 1 lb Ground beef or ground turkey
  • 1 packet Taco seasoning
  • 0.5 cup Water
  • 1 cup Salsa
  • 1 can Black beans
  • 1 cup Corn kernels
  • 6 cups Tortilla chips
  • 2 cups Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.25 cup Green onions (chopped)
  • 0.25 cup Cilantro (optional, chopped)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef or turkey until browned and fully cooked. Drain any excess grease.

Step 3

Add the taco seasoning and 0.5 cup of water to the skillet. Stir to combine, and let simmer for 2–3 minutes until the mixture thickens.

Step 4

Stir in the salsa, rinsed and drained black beans, and corn kernels. Cook for an additional 2 minutes to heat through.

Step 5

In a 9x13 inch baking dish, spread a layer of tortilla chips on the bottom, covering the entire surface.

Step 6

Spoon half of the meat and bean mixture evenly over the tortilla chips.

Step 7

Sprinkle 1 cup of shredded cheddar cheese evenly over the meat mixture.

Step 8

Repeat the layering process: another layer of tortilla chips, the remaining meat mixture, and the remaining 1 cup of shredded cheddar cheese.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 10

Remove the foil and bake for an additional 5–10 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let the casserole rest for 5 minutes. Spoon dollops of sour cream over the top and sprinkle with chopped green onions and cilantro, if using.

Step 12

Serve warm and enjoy!
