Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 6 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 cup sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet, cook the ground beef over medium-high heat until browned, breaking it into crumbles with a wooden spoon. Drain any excess fat.

Step 3

Add the diced onion to the skillet and sauté for 3-4 minutes until softened. Then add the minced garlic and cook for another 1 minute until fragrant.

Step 4

Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to evenly coat the beef.

Step 5

Add the diced tomatoes with green chilies, black beans, and frozen corn to the skillet. Stir everything together and simmer for 5 minutes to allow the flavors to meld. Remove from heat.

Step 6

Place 2 flour tortillas on the bottom of the prepared baking dish, slightly overlapping to cover the surface.

Step 7

Spoon one-third of the beef mixture onto the tortillas and spread it out evenly. Sprinkle 1/3 of the shredded cheddar and Monterey Jack cheeses over the beef mixture.

Step 8

Repeat this layering process two more times, ending with a final layer of cheese on top.

Step 9

Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with chopped fresh cilantro and serve with sour cream if desired.
