Ingredients

  • 500 grams cheese tortellini
  • 250 grams cherry tomatoes
  • 1 medium red bell pepper
  • 1 medium cucumber
  • 0.5 medium red onion
  • 100 grams black olives
  • 150 grams feta cheese
  • 60 ml extra virgin olive oil
  • 30 ml red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 15 grams fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions until al dente, usually around 7-10 minutes.

Step 2

While the tortellini is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the red bell pepper, peel and chop the cucumber, thinly slice the red onion, and slice the black olives.

Drain the cooked tortellini and rinse under cold water to stop the cooking process. Drain well and transfer to a large mixing bowl.
