Ingredients

  • 16 oz Cheese tortellini
  • 3 cups Fresh broccoli florets
  • 1.5 cups Grape tomatoes
  • 0.5 cup Red onion
  • 1 cup Cheddar cheese, cubed
  • 0.5 cup Sunflower seeds
  • 0.75 cup Mayonnaise
  • 0.5 cup Sour cream
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Granulated sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil over medium-high heat.

Step 2

Add the cheese tortellini to the boiling water and cook according to the package instructions, usually about 7-8 minutes. Drain and rinse with cold water to cool the tortellini quickly. Set aside.

Step 3

While the tortellini is cooking, chop the broccoli into small bite-sized florets and set aside.

Step 4

Slice the grape tomatoes in half, dice the red onion, and cube the cheddar cheese to about 1/2-inch pieces.

Step 5

In a large mixing bowl, combine the cooked and cooled tortellini, broccoli florets, halved grape tomatoes, diced red onion, cubed cheddar cheese, and sunflower seeds.

Step 6

In a smaller bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper until smooth and well combined.

Step 7

Pour the dressing over the tortellini mixture and gently toss until all the ingredients are evenly coated.

Step 8

Cover and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.

Step 9

Serve cold and enjoy!
