Ingredients

  • 4 pieces Tomatoes (medium-sized, ripe)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Fresh basil (chopped)
  • 1 tablespoon Fresh thyme (chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Almond flour
  • 2 tablespoons Parmesan cheese (grated)
  • 3 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice each tomato in half horizontally and use a spoon to gently scoop out the seeds and pulp. Be careful not to remove too much of the flesh; you want to create a small hollow for the filling.

Place the hollowed-out tomato halves, cut side up, in a baking dish.

In a small bowl, mix together the chopped parsley, basil, thyme, minced garlic, almond flour, Parmesan cheese, salt, and black pepper.

Add 2 tablespoons of olive oil to the herb mixture and stir until combined. The mixture should resemble a slightly crumbly paste.
