Ingredients

  • 4 whole ripe tomatoes
  • 2 tablespoons fresh parsley
  • 1 teaspoon fresh thyme leaves
  • 2 whole garlic cloves
  • 1 cup breadcrumbs
  • 3 tablespoons olive oil
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the tomatoes and gently scoop out the seeds and pulp using a spoon to create a hollow cavity. Be careful not to pierce the skin.

Finely chop the fresh parsley, thyme, and garlic cloves.

Step 4

In a mixing bowl, combine the breadcrumbs, chopped parsley, thyme, garlic, kosher salt, black pepper, and 2 tablespoons of olive oil. Mix well until the ingredients are evenly combined.
