Ingredients

  • 4 pieces large ripe tomatoes
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Slice the tops off the tomatoes and hollow out the insides using a spoon. Be careful not to puncture the walls of the tomatoes. Set the hollowed tomatoes aside in a baking dish.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and cook for 3-4 minutes until softened.
