Ingredients

  • 6 ripe medium-sized tomatoes
  • 2 tablespoons, chopped fresh parsley

  • 1 cup breadcrumbs
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Start by washing the tomatoes thoroughly. Slice off the top of each tomato (about 1/4 inch from the top) and set the tops aside. Use a small spoon to carefully scoop out the seeds and pulp without breaking the outer flesh, creating a hollow cavity. Reserve the pulp in a bowl.

Chop the reserved tomato pulp finely and mix it with the parsley, thyme, basil, minced garlic, breadcrumbs, 2 tablespoons of olive oil, sea salt, and black pepper. Stir well until combined into a fragrant filling.
