Ingredients

  • 4 pieces Tilapia fillets
  • 2 cups Cherry tomatoes
  • 0.5 cups Walnuts
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with a small amount of olive oil.

Step 2

Rinse the cherry tomatoes and slice them in half. Finely chop the garlic cloves and parsley. Coarsely chop the walnuts.

Step 3

In a medium-sized bowl, combine the cherry tomatoes, walnuts, garlic, 1 tablespoon of olive oil, lemon juice, parsley, salt, and black pepper. Mix well and set aside.

Step 4

Pat the tilapia fillets dry with a paper towel and place them in the prepared baking dish in a single layer.

Step 5

Spread the tomato and walnut mixture evenly over the top of each tilapia fillet.

Step 6

Drizzle the remaining tablespoon of olive oil over the fillets and cover the baking dish with aluminum foil.

Step 7

Bake the tilapia for 15 minutes, then remove the aluminum foil and bake an additional 5 minutes, or until the fish flakes easily with a fork and the topping is lightly golden.

Step 8

Remove the baking dish from the oven and let the tilapia rest for a few minutes before serving.

Step 9

Serve each tilapia fillet with a generous spoonful of the tomato walnut mixture from the pan. Garnish with extra parsley if desired.
