Ingredients

  • 1 sheet puff pastry sheet
  • 4 medium ripe tomatoes
  • 120 grams goat cheese
  • 2 tablespoons extra virgin olive oil
  • 10 leaves fresh basil leaves
  • 2 teaspoons fresh thyme leaves
  • 2 cloves garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon all-purpose flour (for dusting)
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Lightly flour your work surface and roll out the puff pastry sheet to approximately a 30x30 cm square. Transfer the pastry to the prepared baking tray.

Step 3

Using a sharp knife, score a 2 cm border around the edges of the pastry without cutting all the way through. This will create the crust. Prick the inside of the border with a fork to prevent it from puffing up too much.

Thinly slice the tomatoes and lay them on paper towels to drain excess moisture. Set aside.
