Ingredients

  • 250 grams spiral pasta (fusilli or rotini)
  • 300 grams ripe cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 2 pieces garlic cloves, minced
  • 10 leaves fresh basil leaves, chopped
  • 50 grams grated Parmesan cheese
  • 0.5 teaspoons red chili flakes
  • 0 to taste salt
  • 0 to taste black pepper, freshly ground
  • 1 liter water

Directions

Step 1

Bring 1 liter of water to a boil in a large pot. Add a generous pinch of salt and cook the spiral pasta according to the package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, halve the cherry tomatoes and set them aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

Toss the halved cherry tomatoes into the skillet and cook for 4-5 minutes until they soften and release some of their juices.
