Ingredients

  • 2 tablespoons olive oil
  • 3 pieces garlic cloves
  • 1.5 cups cherry tomatoes
  • 4 cups fresh spinach
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)
  • 1 teaspoon lemon juice

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Thinly slice the garlic cloves and add them to the skillet. Sauté for about 1 minute, stirring frequently, until fragrant and lightly golden.

Step 3

Add the cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they soften and start to release their juices.

Step 4

Gradually add the fresh spinach to the skillet, stirring as you go to help it wilt evenly. Continue cooking for 2-3 minutes until all the spinach is wilted.

Step 5

Season the mixture with salt, black pepper, and red pepper flakes (if using) to taste. Stir well to combine.

Step 6

Remove the skillet from the heat and drizzle with lemon juice for a bright, fresh flavor.

Step 7

Serve immediately as a side dish or as a topping for rice, quinoa, or grilled protein. Enjoy!
