Ingredients

  • 400 grams spaghetti
  • 300 grams cherry tomatoes
  • 4 tablespoons extra virgin olive oil
  • 2 cloves garlic cloves
  • 10 leaves fresh basil leaves
  • 150 grams fresh mozzarella
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.

Step 2

While the spaghetti cooks, prepare the tomato salad. Halve the cherry tomatoes and place them in a mixing bowl.

Step 3

Mince the garlic cloves and add them to the bowl with the cherry tomatoes.

Step 4

Drizzle 3 tablespoons of extra virgin olive oil over the tomatoes. Add the balsamic vinegar, salt, black pepper, and optional red chili flakes. Toss well to combine.

Step 5

Chop the fresh basil leaves and gently stir them into the tomato salad.

Step 6

Tear the fresh mozzarella into bite-sized pieces and set aside.

Step 7

In a large mixing bowl, combine the cooked spaghetti with the tomato salad. Toss gently to coat the pasta evenly with the tomato mixture. If the dish looks dry, add a splash of the reserved pasta water.

Step 8

Divide the spaghetti among serving plates and top each portion with the torn mozzarella pieces.

Step 9

Drizzle the remaining tablespoon of olive oil lightly over the plates before serving.

Step 10

Serve immediately and enjoy your fresh and flavorful Tomato Salad Spaghetti!
