Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 3 medium Ripe tomatoes
  • 1 medium Onion
  • 2 Garlic cloves
  • 1 inch piece Ginger
  • 1 Green chili
  • 2 tablespoons Oil
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 10 Curry leaves
  • 2 tablespoons Coriander leaves (cilantro)
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming sticky. Soak the rice in 2 cups of water for 20 minutes, then drain.

Step 2

Chop the tomatoes into small pieces. Finely chop the onion, garlic, ginger, and green chili.

Step 3

Heat the oil in a large saucepan over medium heat. Add the mustard seeds and let them crackle, then add the cumin seeds and sauté for a few seconds until aromatic.

Add the chopped onions and sauté until they become translucent. Add the garlic, ginger, and green chili and continue to sauté for another 2 minutes.

Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes turn soft and oil starts to separate from the mixture.

Add the soaked and drained rice to the tomato mixture, stirring gently to combine.
