  • 1000 grams ripe tomatoes
  • 500 ml water
  • 1 teaspoon salt

Step 1

Wash the tomatoes thoroughly under cold running water to remove any dirt or residue.

Using a sharp knife, score an 'X' on the bottom of each tomato. This will make it easier to remove the skins later.

Bring 500 ml of water to a boil in a large pot.

Carefully place the tomatoes into the boiling water and let them blanch for 1-2 minutes, or until you see the skins starting to peel away.

Using a slotted spoon, transfer the tomatoes immediately to a bowl of ice water. Let them sit for 2 minutes to cool and stop the cooking process.
