Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 0.5 cup basil pesto
  • 0.5 cup heavy cream
  • 12 ounces penne pasta
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons fresh basil, chopped

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and allow it to rest. Slice into strips once cooled slightly.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant.

Add the cherry tomatoes to the skillet and cook for 5 minutes, stirring occasionally, until the tomatoes soften and release their juices.
