Ingredients

  • 3 small Pattypan squash
  • 2 cups Cherry tomatoes
  • 0.5 medium Red onion
  • 0.25 cup Fresh basil leaves
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice

  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the pattypan squash and trim off the ends. Cut them into thin slices about 1/4 inch thick.
